Whole Orange Cake

Yes, that’s right, this cake is made with whole oranges. The juice, the pulp, the rind and even the skin. No, it’s not bitter, it’s loaded with orangey goodness because not a drop of flavor is left behind. The cake has a moist and custardy texture, reminiscent of an orange creamsicle. Garnished with whipped cream and freshly sliced oranges, this cake is an easy to make dessert, packed with flavor.

When you live in the midwest, opening a box of navel oranges in the middle of winter is like receiving your own personal package of sunshine. That means you can use the entire orange, just pulse them in the food processor and then mix it into the cake batter before baking. If you’re not sourcing oranges from a reputable farm, make sure to buy organic ones that haven’t been treated with pesticides or wax finishes.

Ingredients

  • 2 medium (about 320 g) seedless oranges

  • 3/4 cup (170 g) butter, unsalted, room temperature

  • 1 1/4 cups (250 g) granulated sugar

  • 3 large eggs, room temperature

  • 1/2 teaspoon vanilla extract

  • 1 1/2 cups (180 g) all-purpose flour 

  • 1/2 cup (68 g) almond flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • Optional: Whipped cream and sliced oranges for garnish

Directions

  • Preheat oven to 350°F.
  • Wash oranges and then slice into quarters and place in a food processor. Pulse until the oranges are almost puréed, but still contain very small chunks.
  • Using a stand mixer, cream together the butter and sugar until light and fluffy. Add the eggs one at a time. Scrape the edges of the bowl and mix again. Add the processed oranges and the vanilla. Mix again.
  • Whisk together the all-purpose flour, almond flour, baking powder and salt. Sift and then add to the ingredients in the mixer. Slowly mix until a batter forms. Scrape the edges of the bowl and mix again.
  • Grease and line a 9” round springform pan with parchment paper. Fill the pan with cake batter. Bake at 350°F for 35-40 minutes or until set.
  • Let cake cool completely before removing from the pan. Garnish with whipped cream and thinly sliced oranges before serving.
